Every day a palette of inspired dishes of mussels, lobster, herring, maquerel, clams, bouillabaisse, Island's veal, home breed boars, wild fruits and berries, as well as local cheeses like
the "Pied-de-Vent” and the “Tomme des Demoiselles”, reminisce the past while plunging you into today's novelties as if you were jumping ino the waves

Chef Evangeline Gaudet draws her inspiration from both her designer's background and a cooking creativity inherited from her insular youth. Squid with parmesan cheese, salmon tartare, shark marinated in pure olive oil with pears.. the “Refectoire's” table is deliciously original. Two homemade products are issued by the “Vieux Couvent”: a raspberry salad dressing that one can find in the “delis” of Quebec, and the “Vieux Couvent's Brew”, served on the spot, a beer brewed on the Magdalen Islands, out of wheat perfumed with herbs.
